What I Eat in a Day! Working from Home Edition

I always find it funny when people ask what I eat in a day, because I still mostly eat like a student despite the fact I graduated university many years ago now!

Since I've been working from home for the past year and a half, I have been cooking at home a LOT more and because of that, I have been trying to cook healthy meals as much as possible.

So I wanted to share a few of these with you in today's blog post! 

Breakfast - Eggs Florentine

This is quite a bougie breakfast for the start of a working day, but when I do get up early enough I like to make sure I eat a good breakfast to start the day off right!

Ingredient List

Eggs
Spinach
Toasted Muffins
Hollandaise sauce 

Lunch - Chicken Fried Rice

This is pretty much my go to lunch meal for most days of the week as it's so quick and easy to make! I do cheat a little, with the help of Uncle Ben but when you have a long working day, cutting down cooking time is sometimes a necessity! 

Ingredient List

Uncle Ben's egg fried rice
Chicken (cooked with chilli flakes, salt, pepper, oregano, green chilli and tomato purée paste)
Broccoli

Dinner - Chicken Stir Fry

For my last meal of the day, I usually try to use whatever left over meat I have from my lunch. Stir Fry is definitely a great meal to pack in as much veg as possible!

Ingredient List

Egg Noodles
Chicken (cooked with chilli flakes, salt, pepper, oregano, green chilli and tomato purée paste)

Soya Sauce
Spinach
Mushroom
Cabbage
Bean Sprouts
